This is the most consequential timing decision for a Destin trip, and the honest answer is that fall is the connoisseur's pick while summer is the full experience.
Both are good. They are simply different products, and the tradeoff is crowds and price against a tail risk you manage at booking time.

Summer for the complete version: warmest water, everything running, latest sunsets — with peak crowds, peak prices and an afternoon storm rhythm.
Fall for the best water-to-crowd ratio on the calendar: water that holds summer warmth, thinner crowds, softer prices — carried with refundable bookings because it overlaps hurricane season.
