This is not really about booking. It is about how much of your week you are willing to commit to before you know what the weather is doing and what your group actually enjoys.
Over-planning is the more common failure here, because the things that define a Destin trip float, and floating things answer to wind.
The short answer
Commit two things: the main water day and, in season, one evening. Leave the rest genuinely open.
The reason is not spontaneity for its own sake — it is that slack is what lets a cancelled morning become a shuffle rather than a loss.
