Book ahead: lodging first, then any big-capacity or celebration boat, your main water day, and a sunset cruise in season. In summer shift everything a notch earlier; on holiday weekends, two.
Decide on the ground: second and third activities, party-boat fishing, dolphin cruises, and anything anyone is lukewarm about.
